- Take Salt
Roast Breadfruit and saltfish echoes from a distant past, one that resonates where Trini food originated and the struggle it has endured. But, to me, it has another memory of a struggle……. Breadfruit should ideally be roasted on an open fire. Cook on all sides till brownish black.
Instructions to make Roasted breadfruit:
- Heat up frying pan to be very dry.
- Pour in the dry breadfruit and stir for 20minutes.
- Sprinkle salt in it and continuing stirring for another 10minutes.
Use skewer to check if cooked. Take breadfruit off grill and use a pot holder to hold and peel off skin. Cut out the 'heart'(uneatable portion in the middle with seed). Oil breadfruit and, with a knife, make a cross at the top and bottom of the fruit. Breadfruit (Artocarpus altilis) is a species of flowering tree in the mulberry and jackfruit (Artocarpus heterophyllus) family (Moraceae).
