Steps to make Egg kothu chapati:
- Keep all ingredients ready. Tear the chapati into small pieces. Set aside.
- Heat oil in a pan add fennel powder, onion and green chillies. Saute till translucent.
- Add ginger garlic paste and saute till raw smell disappears. Add tomatoes and cook till mushy.
- Now add turmeric powder, red chilli powder and garam masala. Mix well.
- Add salt enough for this masala. Pour little water and boil.
- Add the chapati and mix well.
- Set aside in the pan. Add a tbspn oil and break open the eggs.
- Add salt and pepper powder for the eggs.
- Scramble the eggs and when half done mix everything so it sticks to the chapati.
- Garnish with coriander leaves. Serve hot.
