Steps to make Asafoetida (hing)Pani Puri:
  1. Chop the coriander and mint leaves.
  2. In mixer-jar combine, the mint leaves, coriander leaves, green chillies, tamarind pulp, jaggery,black salt, cumin powder, chat masala, red chilli powder, hing and grind to a fine paste along with some water.
  3. Check the salt and spices and adjust to suit your taste.
  4. In a bowl mix all ingredients for puri and make a semi soft dough of it with lukewarm water.
  5. Knead it for 5mins to form gluten.
  6. Cover the dough and keep it for 30mins.
  7. Preheat the oil for deep frying.
  8. Now roll medium size of roti by dough.
  9. By round cookie cutter or a cap of bottel cut shape of puri.
  10. Add one by one puris in pre heated oil.
  11. Fry it till golden brown from both side.
  12. Fry on low to medium heat to get that perfect crispness.
  13. Serve Puris with Pani and potato masala.
