Today we will also make Spinach Curry with Yogurt Sauce for the dinner. Ever thought of making kadhi with an infusion of palak? Sounds strange, but tastes and looks very interesting. Palak purée and green paste imparts flavouir along with a bright green colour and vitamin.
Instructions to make Palak kadhi:
- In a mixing bowl take curd and besan. Beat well. Add approximate 1 glass water gradually and prepare lump free mixture.
- In a pan heat oil. Add cumin seeds, fenugreek seeds, cloves and cinnamon piece. Add asafoetida and dry red chili. Add chopped green chili and ginger garlic paste. Saute for sometimes. Add chopped palak and saute for couple of minutes.
- Add prepared curd besan mixture. Add salt and turmeric powder. Mix them. Add red chili powder. Stir in between. Boil till get desired consistency.
- To make more delicious make tadka of ghee, cumin seeds and red chili powder. Pour this tadka over kadhi. Garnish with spicy bundi. Serve hot with rice or paratha.
Palak Kadhi or Spinach Kadhi is a yogurt based gravy made with spinach, chick pea flour and Indian spices. Its a popular North Indian dish often served with rice.
