Steps to make Jain Ragda Pattice:
- Wash and soak dried peas for 3-4 hours. Then cook on pressure cooker on 5 - 6 whistles or until peas turn soft,do not drain. Water from cooked peas used them water with when required
- Heat oil in a kadhai, add cumin seeds, when they crackled, add asafoetida, green chilli paste, and finely chopped tomatoes and cook for 1 minute
- Add cooked peas, along with water and one boiled raw banana and mix well. Add all spices. Mash a few pieces and raw banana with a back of a spoon how to make a thick.add 1 and 1/2 cups water and mix well. Cook it over low flame for 8 to 10 minutes. Or until turns thick
- For patties Boil bananas into a pressure cooker (around 3 whistles) and let it cool down. Remove the skin and mash boiled bananas into a bowl and add green chillies salt, coraiander leaves and garam masala powder. Mix all the ingredients very well.
- If required add some beaten rice (poha) for patties binding. Add some lemon juice and mix well.
- Divide the stuffing into equi parts and make each part into a ball and press them flat to shape it into a pattice. Heat the tawa and shallow fry the pattice adding oil till it is golden brown from both the sides.
- Place two pattice in a bowl and pour the ragda over to it. Add chutneys, yogurt, sev, finely chopped tomatoes, pomegranate seeds and chopped coriander. Sprinkle chaat masala and serve hot.
